Ingredients:

  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 medium Cucumber, diced
  • 1 cup Corn, canned or frozen
  • 1 medium Carrot, grated
  • 1 cup Broccoli florets
  • 2 medium Potatoes, diced
  • 200g Beef, ground
  • 200g Grass Fed Chicken, diced
  • 100g Bacon, chopped
  • 200g Flat Noodles
  • 1/2 cup Mayonnaise
  • 2 large Eggs
  • 1 tsp Baking Powder
  • 1 cup Oats
  • 1 cup All Purpose Flour
  • 1 cup Couscous
  • 1 cup Rice
  • 1/2 cup Cream Cheese
  • 1/2 cup Parmesan Cheese, grated
  • 1/4 cup Cream
  • 2 tbsp Butter
  • 1 tbsp Honey
  • 1 tbsp Fish Sauce
  • 200g Pasta

Instructions:

  • Preheat the oven to 180°C (350°F).
  • In a large skillet, melt 2 tbsp of butter over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  • Add the ground beef and diced chicken to the skillet, cooking until browned. Stir in the chopped bacon and cook until crispy.
  • In a large bowl, combine the cooked meat mixture with diced cucumber, corn, grated carrot, and broccoli florets.
  • In another bowl, mix the mayonnaise, eggs, baking powder, oats, all-purpose flour, cream cheese, and cream until smooth. Add this mixture to the meat and vegetable bowl and stir well.
  • Cook the flat noodles according to package instructions, then drain and add to the mixture.
  • In a greased baking dish, layer the noodle mixture evenly. Top with grated Parmesan cheese and drizzle with honey and fish sauce.
  • Bake in the preheated oven for 30-35 minutes or until golden and bubbly.
  • While the bake is cooking, prepare the couscous and rice according to package instructions as a side dish.
  • Serve the creamy beef and vegetable noodle bake hot with a side of couscous and rice.
